The short answer
Watch the original Chan Ka-Kui story in release order: Police Story (1985), Police Story 2 (1988), Police Story 3: Super Cop (1992), and Police Story 4: First Strike (1996). New Police Story (2004) and Police Story 2013 are separate reboots with different lead characters.
Original Chan Ka-Kui continuity
These four films follow Jackie Chan as Hong Kong officer Chan Ka-Kui, called Kevin Chan in some English-language releases.

Officer Chan Ka Kui manages to put a major Hong Kong drug dealer behind the bars practically alone, after a shooting and an impressive chase inside a slum. Now, he must protect the boss' secretary, Selina, who will testify against the gangster in court.

The Hong Kong super-cop must stop a group of blackmailing bombers at the same time that the villains of the first Police Story are out for revenge.

A Hong Kong detective teams up with his female Red Chinese counterpart to stop a Chinese drug czar.

Hong Kong cop Chan Ka-Kui returns, working with Interpol to track down and arrest an illegal weapons dealer. Chan later realizes that things are not as simple as they appear and soon finds himself to be a pawn of an organization posing as Russian intelligence.
Separate reboots
The franchise name returned twice, but neither film continues Chan Ka-Kui’s story. They can be watched independently after the original run.

Alternate titles that cause confusion
Supercop is Police Story 3; First Strike is Police Story 4; and Police Story: Lockdown is the North American title used for Police Story 2013.
